History of Cajun Cuisine
Cajun cuisine was born in the 17th century, when Acadians (residents of Acadia, a French province near what is now Quebec) were forced to find a new home. They settled in Southern Louisiana. Faced with a drastically different climate, they struggled to find ways to harvest and prepare food. They came to rely on slow-cooked meat, corn bread, and seasonal vegetables. Seafood was introduced a few years later and became another Cajun staple.
Characteristic Spices
Cajun cuisine is known for having strong, bold, distinct flavors. These flavors come from a variety of independent as well as blended spices. Individual favorites include thyme, bay leaves, sugarcane and molasses, oregano, black pepper, cayenne pepper, parsley, celery, garlic, and onion. Acadians also blended several spices together to create seafood mixes, hot sauces, marinades, and various barbecue rubs.
