Cajun Style Cooking
Some classify the Cajun style of cooking as rustic cuisine. The recipes associated with this style originated with the French-speaking Acadian people of Louisiana, using foods that were easy to find in the region. Staples in these dishes include rice, sausages, seafood, and vegetables.
The Shorty Pants Lounge kitchen has come up with some of the most authentic recipes that you will find outside of Bourbon Street, incorporating the ingredients mentioned above along with rubs and spices direct from Louisiana. Crawfish-N-Shrimp Etouffee
Crawfish & shrimp smothered in a rich creamy etouffee sauce with creole vegetables, served with rice.
Jambalaya
A Louisiana rice based dish, steeped in rich and subtle spices along with Andouille sausage, smoked chicken, and shrimp.
Shrimp-N-Grits
Large shrimp sauteed with Andouille sausage, hickory-smoked bacon, onions, and mushrooms, served over our homemade cheddar cheese & jalapeno grits.
Po Boy Sandwiches
This traditional sandwich from Louisiana consists of lettuce, tomato, and our homemade Cajun mayo on French bread along with one of the following meat choices:
- Southern Fried Catfish
- Big, Deep Fried Gulf Oysters
- Hand-Breaded Shrimp
- Smoked Cajun Andouille Sausage (with homemade remoulade sauce in place of the Cajun mayo)
Sausage & Chicken Gumbo
A hearty helping of our rich gumbo served with rice, either by cup or bowl.
Blackened Creole Chicken
Blackened chicken with sauteed peppers and onions topped with Pepper jack cheese, served on a toasted Kaiser.
Crab Cake Pasta
Two delicious handmade shrimp and lump blue crab cakes are placed on a bed of fresh fettuccine with delicious seafood cream sauce.
Smothered Catfish
A catfish filet, either fried or blackened, served on a bed of rice, smothered in our crawfish etouffee.
New Orleans Medley
A plateful of our signature entrees: creamy Crawfish Etouffee, rich Jambalaya, Red Beans & Rice, and a half link of our Andouille sausage.
Beignets
Louisiana's doughnut - a French Quarter favorite! Perfectly deep fried pastry tossed in powdered sugar and served with our house made sweet raspberry sauce.
